Ingredients list for Vegetable Biryani

  • 3 1/2 cups Rice soaked
  • 1 cup Fenugreek leaves (methi)
  • 1/4 cup Green peas shelled
  • 3 large Onion sliced
  • 1 small Carrot diced
  • 1 small Cauliflower cut into florets
  • 2 small Potatoes cut into cubes
  • 1/4 cup French beans
  • 1 tablespoon Dill leaves (suva)
  • 1 teaspoon Red chilli powder
  • 1/2 teaspoon Cardamom powder
  • 1/4 teaspoon Turmeric powder
  • 1 teaspoon Garam masala powder
  • 2 teaspoon Caraway seeds (shahi jeera)
  • 1 1/2 teaspoon Yogurt
  • to taste Salt
  • 2 1/2 teaspoons Ghee
  • 2 Green chillies slit
  • 1 teaspoon Black peppercorns
  • 2-3 Bay leaves
  • 1 1/2 tablespoons Ginger garlic paste
  • 3 tablespo Oil
  • 1 inch piece Ginger cut into juliennes
  • a few saffron strands
  • 2-3 teaspoons Kewra water
  • 15-20 Fresh mint leaves
