Ingredients
- 2 medium pomfrets, cut into darnes
- Salt to taste
- ¼ teaspoon turmeric powder
- ½ tablespoon lemon juice
- ½ cup scraped fresh coconut
- 3-4 dried red chillies
- 2 green chillies, slit
- 1 inch ginger, roughly chopped
- 5-6 garlic cloves
- 1 tablespoon coriander seeds
- 6-8 black peppercorns
- 2 tablespoons oil
- 1 medium onion, chopped
- ½ cup coconut milk
- Fresh coriander sprig for garnish
- Red rice for serving
Method
- Take the pomfret darnes in a bowl, add salt, turmeric powder and lemon juice, rub these all over the darns, and set aside for 10 minutes to marinate.
- Put scraped coconut in a grinder jar, add dried red chillies, green chillies, ginger, garlic, coriander seeds, black peppercorns and ¾ cup water and grind to a fine paste.
- Heat oil in a deep non-stick pan, add onion and sauté till golden brown. Add the ground paste, mix and sauté till oil separates.
- Add 1½ cups water and salt, mix well and let it come to a boil. Lower the heat, add fish darnes, cover and cook for 5-6 minutes. Add coconut milk and cook for 1 minute more.
- Transfer into a serving bowl, garnish with coriander sprig and serve hot with red rice.
