Ingredients
- 3 medium potatoes (aloo), peeled
- 1 medium bunch spinach (palak), washed well
- 2 tablespoons mustard oil
- 1 teaspoon mustard seeds
- 1 teaspoon cumin seeds
- ¼ teaspoon fenugreek seeds (methi dane)
- 2 dried red chillies, broken
- 1 medium onion, chopped
- Salt to taste
- 1 teaspoon red chilli powder
- ½ teaspoon turmeric powder
- 1 teaspoon cumin powder
- 2 teaspoons coriander powder
- ½ teaspoon garam masala powder
- Chapattis for serving
Method
- Roughly chop spinach. Cut potatoes in 1-inch pieces.
- Heat mustard oil in a kadai till it begins to smoke. Reduce heat, add mustard seeds and once they start to splutter, add cumin seeds, fenugreek seeds and dried red chillies, mix and saute for 30 seconds.
- Add onion and salt, mix and sauté till onion turns golden brown.
- Add potatoes, red chilli powder, turmeric powder, cumin powder and coriander powder and mix well.
- Add 1½ cups water, mix well, cover and cook for 8-10 minutes or till the potatoes are cooked.
- Add spinach and garam masala powder and mix well. Add 1 cup water, cover and cook for 5-6 minutes.
- Transfer into a serving bowl and serve hot with chapattis.
