Soya Chutneywala

Ingredients 

  • 1½ cups soya nuggets, soaked and drained
  • 1 cup green chutney
  • 1 tablespoon oil
  • 1 teaspoon cumin seeds
  • 3-4 green chillies
  • 10-12 curry leaves
  • 2 medium onions, sliced
  • 2 medium tomatoes, quartered
  • 1½ tablespoon coriander powder
  • ½ teaspoon turmeric powder
  • 1 tablespoon finely chopped ginger
  • 1 tablespoon finely chopped garlic 
  • 1 teaspoon cumin powder
  • 1 teaspoon red chilli powder
  • 1 teaspoon dried mango powder
  • 1 teaspoon garam masala powder
  • 1 teaspoon black pepper powder
  • 1 cup thick yogurt
  • Salt to taste
  • Birds eye chillies for garnish

Method

  1. Heat oil in a non-stick pan, add cumin seeds and green chillies and sauté for half a minute. Add curry leaves and onions and sauté till translucent.
  2. Add tomatoes, coriander powder, turmeric powder, ginger, garlic, cumin powder, red chilli powder, dried mango powder, garam masala powder and black pepper powder and mix well and cook for 2-3 minutes.
  3. Add green chutney, yogurt and salt and mix well. Add soya nuggets and mix well and cook till soya nuggets are done.
  4. Transfer into a serving bowl, garnish with bird’s eye chillies and serve immediately.
