Soya Aloo Matar Pulao

Ingredients

  • ¾ cup soya chunks
  • 2 medium potatoes, peeled, and cut into 1-inch pieces
  • ¼ cup green peas
  • 1½ cups Basmati rice, washed, soaked for 20 minutes and drained 
  • 2 tablespoons ghee
  • 3-4 cloves
  • 1 inch cinnamon 
  • 3-4 green cardamoms
  • 8-10 black peppercorns
  • 1 teaspoon cumin seeds
  • 1 large onion, sliced
  • Salt to taste
  • 1 large tomato, sliced
  • 1 teaspoon red chilli powder
  • ¼ teaspoon turmeric powder
  • 1 teaspoon coriander powder
  • 1 teaspoon cumin powder
  • ½ teaspoon garam masala powder
  • 2 tablespoons chopped fresh coriander leaves

Method

  1. Take soya chunks in a bowl, add 2 cups lukewarm water and let them for 10 minutes.
  2. Heat ghee in a pressure cooker, add cloves, cinnamon, green cardamoms, black peppercorns and cumin seeds, mix and saute. 
  3. When the cumin seeds begin to change colour add onion and mix well. Add salt, mix well and saute onion turns golden. 
  4. Add tomato, mix, and saute for 2-3 minutes or till soft and pulpy. 
  5. Add red chilli powder, turmeric powder, coriander powder, cumin powder, garam masala powder and 2 tablespoons water, mix well and saute for 1 minute.
  6. Add green peas and potatoes. Squeeze the soya chunks to drain excess water and add and mix well.
  7. Add rice and mix gently. Add 3 cups water and mix gently.  Add coriander leaves and mix well and let the mixture come to a boil on high heat. Cover the cooker with a lid and cook on medium heat for 3-4 whistles. 
  8. Switch the heat off and allow the pressure to reduce completely. Open the cooker and transfer into a tiffin box. Wait till the pulao cools before putting the lid on the box.
