Green Masala Fish Fry

Ingredients

  • 4 large king fish (surmai) darnes
  • Salt to taste
  • ½ teaspoon turmeric powder
  • ½ large bunch of coriander leaves
  • 4 green chillies
  • 4 garlic cloves
  • ½ inch ginger, roughly chopped
  • 2 cloves
  • ½ inch cinnamon
  • 10-12 black peppercorns
  • 1 teaspoon cumin seeds
  • 1 tablespoon lemon juice
  • ½ teaspoon sugar
  • ½ cup semolina
  • ¼ cup rice flour
  • Oil for shallow frying
  • Onion rings for serving
  • Lemon wedges for serving

Method

  1. Place fish darnes on a plate, sprinkle salt and turmeric powder on them and rub well. Set aside for 15 minutes.
  2. Put coriander leaves in a grinder jar, add green chillies, garlic, ginger, cloves, cinnamon, black peppercorns, cumin seeds, lemon juice, salt, sugar and 1 tablespoon water and grind to fine paste.
  3. Spread semolina and rice flour on another plate.
  4. Apply the ground paste on the fish darnes well, roll in semolina-rice flour mixture and press. Keep them on another plate.
  5. Heat sufficient oil in a non-stick pan, place 2 fish darnes in it and shallow-fry for 3-4 minutes on one side. Flip and fry for 2-3 minutes on other side as well. Drain on absorbent paper. Shallow fry the remaining 2 darnes similarly.
  6. Arrange them on a serving platter and serve hot with onion rings and lemon wedges.
