Ingredients
- 4 large king fish (surmai) darnes
- Salt to taste
- ½ teaspoon turmeric powder
- ½ large bunch of coriander leaves
- 4 green chillies
- 4 garlic cloves
- ½ inch ginger, roughly chopped
- 2 cloves
- ½ inch cinnamon
- 10-12 black peppercorns
- 1 teaspoon cumin seeds
- 1 tablespoon lemon juice
- ½ teaspoon sugar
- ½ cup semolina
- ¼ cup rice flour
- Oil for shallow frying
- Onion rings for serving
- Lemon wedges for serving
Method
- Place fish darnes on a plate, sprinkle salt and turmeric powder on them and rub well. Set aside for 15 minutes.
- Put coriander leaves in a grinder jar, add green chillies, garlic, ginger, cloves, cinnamon, black peppercorns, cumin seeds, lemon juice, salt, sugar and 1 tablespoon water and grind to fine paste.
- Spread semolina and rice flour on another plate.
- Apply the ground paste on the fish darnes well, roll in semolina-rice flour mixture and press. Keep them on another plate.
- Heat sufficient oil in a non-stick pan, place 2 fish darnes in it and shallow-fry for 3-4 minutes on one side. Flip and fry for 2-3 minutes on other side as well. Drain on absorbent paper. Shallow fry the remaining 2 darnes similarly.
- Arrange them on a serving platter and serve hot with onion rings and lemon wedges.
