Ingredients

  • 2 cups fresh pigeon peas (tuvar dana)
  • 6 tablespoons oil
  • 4 dried red chillies
  • 1 inch cinnamon
  • 4-6 cloves
  • 2 bay leaves
  • ½ teaspoon carom seeds (ajwain)
  • A big pinch of asafoetida (hing)
  • 4 medium onions, chopped + to sprinkle
  • 3 tablespoons ginger-garlic-green chilli paste
  • 2 cups chopped green garlic
  • 4 medium tomatoes, chopped
  • Salt to taste
  • 1 teaspoon turmeric powder
  • 4 teaspoons red chilli powder
  • 4 teaspoons coriander powder
  • 2 teaspoons cumin powder
  • 2 teaspoons sugar
  • 1 teaspoon garam masala powder
  • Sev to sprinkle
  • Lemon wedges for serving
  • Toasted bread slices for serving

Method

  1. Heat oil in a pressure cooker, add dried red chillies, cinnamon, cloves, bay leaves, carom seeds and asafoetida, mix and sauté till fragrant. Add onions, mix and saute till translucent.
  2. Add ginger-garlic-green chilli paste, mix and sauté for 2-3 minutes. Add green garlic, mix and sauté for 1 minute.
  3. Add tomatoes and salt, mix and saute till tomatoes are pulpy.
  4. Add turmeric powder, red chilli powder, coriander powder and cumin powder and mix well.
  5. Add tuvar dana and sugar and mix well. Add 3 cups water, mix well and once the mixture comes to a boil, close the cooker with tis lid and cook under pressure on high heat till the pressure is released 3 times.
  6. Open the lid once the pressure settles completely. Add garam masala powder and mix well.
  7. Transfer into a serving bowls, sprinkle sev and onion and serve hot with lemon wedges and toasted bread slices.
