Ingredients
- 2 cups gathiya
- 1½ tablespoons oil
- 1 teaspoon mustard seeds
- 1 teaspoon cumin seeds
- 8-10 curry eaves
- 2-3 green chillies, chopped
- 1 teaspoon chopped garlic
- 1 teaspoon chopped ginger
- 1 medium onion, chopped
- 2 medium tomatoes, chopped
- ¼ teaspoon turmeric powder
- 1 teaspoon coriander powder
- ½ teaspoon cumin powder
- 1 teaspoon red chilli powder
- Salt to taste
- 2 tablespoons chopped fresh coriander leaves + for garnish
- 1 teaspoon sugar
- Rotis to serve
Method
- Heat oil in a non-stick pan, add mustard seeds and cumin seeds and saute till the seeds splutter. Add curry leaves, green chillies, garlic and ginger, mix and sauté for 1-2 minutes.
- Add onion, mix and saute till translucent. Add tomatoes, mix and saute till soft and pulpy.
- Add turmeric powder, coriander powder, cumin powder and red chilli powder, mix well and saute for 1-2 minutes.
- Add 2 cups water, mix and cook till the mixture comes to a boil. Add salt, mix and cook for 1 minute.
- Add gathiya and coriander leaves and mix well. Add sugar, mix and cook for 1 minute.
- Transfer into a serving bowl, garnish with coriander leaves and serve hot with rotis.
