Ingredients
- 3 medium green capsicums
- 2-3 tablespoons oil
- 1 teaspoon cumin seeds
- 1 teaspoon mustard seeds
- 2 teaspoons fennel seeds
- 1 inch ginger, chopped
- 10-12 garlic cloves, sliced
- 2-3 green chillies, slit
- 2 medium onions, sliced
- 2 medium tomatoes, sliced
- 1 teaspoon red chilli powder
- 1 teaspoon cumin powder
- 1½ teaspoons coriander powder
- ¼ teaspoon turmeric powder
- Salt to taste
- 1 sprig of curry leaves
- 2 tablespoons tamarind water
- 2 tablespoons chopped fresh coriander
- Chapatti for serving
Method
- Deseed and slice the capsicums.
- Heat oil in a kadai, add cumin seeds, mustard seeds, fennel seeds, ginger and garlic, mix well and sauté for 30 seconds.
- Add green chillies and onions, mix well and sauté for 2-3 minutes.
- Add tomatoes, mix and sauté for 2-3 minutes. Add capsicums and mix well.
- Add red chilli powder, cumin powder, coriander powder and turmeric powder and mix well. Add salt and mix. Add curry leaves and mix.
- Add ½ cup water, mix well and cook on medium heat for 4-5 minutes.
- Add tamarind water and coriander leaves and mix well.
- Serve with chapatti.
