Ingredients
- 1 large green brinjal (baingan)
- 3-4 garlic cloves
- 2 medium tomatoes
- 1 medium onion, finely chopped
- 2 green chillies, chopped
- 3 tablespoons chopped fresh coriander leaves
- Salt to taste
- 2 tablespoons mustard oil
Method
- Make a few slits on the baingan, insert a garlic clove into each slit.
- Heat a wire rack on direct flame, place the baingan and tomatoes over it and roast on medium heat, rotating the vegetables till well charred from all sides.
- Place the roasted baingan and tomatoes on the worktop, peel the charred skin, trim the tops and finely chop them along with the roasted garlic cloves. Transfer into a bowl, add onion, green chillies, coriander leave, salt and mustard oil and mix till well combined.
- Transfer into a serving bowl and serve.
