Ingredients
- 2 cups sprouted green gram (ankurit moong)
- 2-3 tablespoons oil
- 1 teaspoon mustard seeds
- ½ teaspoon asafoetida (hing)
- 10-15 curry leaves
- 1 large onion, chopped + to sprinkle
- 1 tablespoon ginger-garlic paste
- 1½ teaspoons red chilli powder
- ½ teaspoon turmeric powder
- 2 tablespoons goda masala
- Salt to taste
- 2-3 tablespoons chopped fresh coriander leaves
- Farsan as required
- Fresh coriander sprig for garnish
- Lemon wedges for serving
- Pavs for serving
Method
- Heat oil in a non-stick kadai, add mustard seeds and once they start to splutter, add asafoetida and curry leaves and mix well.
- Add onion, mix and sauté till golden brown. Add ginger-garlic paste, mix and sauté for 2 minutes.
- Add sprouted green gram and mix well. Add red chilli powder, turmeric powder and goda masala and mix well.
- Add 3 cups water and mix well. Add salt, mix, cover and cook for 10-15 minutes.
- Add coriander leaves and mix well.
- Transfer into a serving bowl. Sprinkle farsan and onions on top. Garnish with coriander sprig and serve hot with lemon wedges and pavs.
