Moong Ussal Pav

Ingredients

  • 2 cups sprouted green gram (ankurit moong)
  • 2-3 tablespoons oil
  • 1 teaspoon mustard seeds
  • ½ teaspoon asafoetida (hing)
  • 10-15 curry leaves
  • 1 large onion, chopped + to sprinkle
  • 1 tablespoon ginger-garlic paste
  • 1½ teaspoons red chilli powder
  • ½ teaspoon turmeric powder  
  • 2 tablespoons goda masala
  • Salt to taste
  • 2-3 tablespoons chopped fresh coriander leaves
  • Farsan as required
  • Fresh coriander sprig for garnish
  • Lemon wedges for serving
  • Pavs for serving

Method

  1. Heat oil in a non-stick kadai, add mustard seeds and once they start to splutter, add asafoetida and curry leaves and mix well.
  2. Add onion, mix and sauté till golden brown. Add ginger-garlic paste, mix and sauté for 2 minutes. 
  3. Add sprouted green gram and mix well. Add red chilli powder, turmeric powder and goda masala and mix well.
  4. Add 3 cups water and mix well.  Add salt, mix, cover and cook for 10-15 minutes.
  5. Add coriander leaves and mix well.
  6. Transfer into a serving bowl. Sprinkle farsan and onions on top. Garnish with coriander sprig and serve hot with lemon wedges and pavs.
