Ingredients

  • 3 medium potatoes (aloo), cut into wedges
  • 300 grams lady fingers (bhindi), cut into 1 inch pieces
  • 2 tablespoons oil
  • 1 teaspoon cumin seeds
  • ½ teaspoon asafoetida (hing)
  • 1½ tablespoons chopped garlic
  • 2 green chillies, chopped
  • ½ teaspoon red chilli powder
  • ½ teaspoon turmeric powder
  • 2 teaspoons pav bhaji masala
  • 2 teaspoons coriander powder
  • ½ teaspoon cumin powder
  • ½ teaspoon chaat masala 
  • Salt to taste
  • ¼ teaspoon garam masala powder
  • 2 teaspoons lemon juice
  • 2 tablespoons chopped fresh coriander leaves + for garnish

Method

  1. Heat oil in a kadai, add cumin seeds and let them change colour. Add asafoetida, garlic and green chillies, mix and sauté for 30 seconds.
  2. Add lady fingers and potatoes, mix well and saute on high heat for 4-5 minutes stirring once every minute.  
  3. Add red chilli powder, turmeric powder, pav bhaji masala, coriander powder, cumin powder, chaat masala, salt and garam masala powder and mix till well combined. Reduce heat to medium and cook for 8-10 minutes, mixing every few minutes.
  4. Drizzle lemon juice and add coriander leaves and mix well. 
  5. Transfer into a serving bowl and serve hot garnished with coriander leaves.
