Ingredients
- 3 medium potatoes boiled, peeled and mashed
- 4 pieces pavs
- 1 tablespoon oil
- ½ tablespoon garlic, chopped
- 2 green chillies, chopped
- ¾ teaspoon turmeric powder
- 2 tablespoons coriander leaves, chopped
- Salt to taste
- 1½ cups gram flour (besan)
- ½ teaspoon red chilli powder
- A pinch of baking soda
- Green chutney as required
- Dabeli chutney as required
- Date and tamarind chutney as required
- Dry lasun chutney as required
- 4 slices onion
- 4 slices tomato
Method
- Heat oil on a non-stick pan, add garlic, green chillies and sauté till garlic turns golden brown. Add ½ tsp turmeric powder and sauté for a few seconds.
- Add potatoes and mix well. Add chopped coriander and salt and mix well.
- Take gram flour, remaining turmeric powder, red chilli powder, salt, baking soda and 1 cup water and whisk well to form a thick batter of coating consistency.
- Cut the pav in half, and apply green chutney and dabeli masala on one side. Apply date and tamarind chutney and sprinkle dry lasun chutney on the other side.
- Apply a portion of the prepared potato mixture on one slice of the pav and place onion slice and tomato slice on top. Place the other slice of the pov and press it slightly.
- Heat sufficient oil in a kadai, dip the prepared sandwiches in the prepared batter and coat well, drop into the hot oil and deep fry till golden and crisp. Drain on an absorbent paper.
- Serve hot with dry lasun chutney, masala tea and fried green chillies.
