Crispy Honey Chilli Potatoes

Ingredients
· 20-25 baby potatoes, par-boiled and unpeeled
· 2 tsps honey
· 1½ tbsps red chilli sauce
· 1 tsp red chilli flakes
· Crushed black peppercorns to taste
· Salt to taste
· 1½ tbsps oil
· 1 tbsp finely chopped ginger
· 1 tbsp finely chopped garlic
· 2 spring onion bulbs, chopped
· 2 spring onion greens, chopped + for garnish
· A pinch of sugar
Method
1. Preheat oven to 180º C.
2. Crush each potato between your palms and arrange them on a baking tray. Spray some olive oil over them. Sprinkle crushed black peppercorns and salt. Place the tray in the preheated oven and cook for 15-20 minutes or till the potatoes are crispy.
3. Remove the baking tray from the oven and set aside.
4. Heat oil in a non-stick pan, add ginger, garlic and spring onion bulbs, mix and sauté for 1-2 minutes.
5. Add red chilli sauce and mix well. Add red chilli flakes, salt, sugar and some spring onion greens and mix well.
6. Add honey and mix. Add the roasted potatoes and mix till well combined. Add some more spring onion greens and mix.
7. Transfer into a serving bowl, garnish with remaining spring onion greens and serve hot.
