Ingredients
- 2 cups gram flour (besan)
- 2 medium tomatoes finely chopped
- 8 white bread slices
- 1-2 green chillies, finely chopped
- 1 tablespoon fresh coriander leaves, finely chopped
- ½ teaspoon turmeric powder
- ¼ teaspoon cumin powder
- ½ teaspoon coriander powder
- ½ teaspoon red chilli powder
- ½ teaspoon garam masala powder
- Salt to taste
- Oil for greasing and drizzling
- Butter as required
- Green chutney as required
- A few roundels of tomato
- Chaat masala for sprinkling
- Cherry tomatoes for garnish
Method
- Take fine besan in a large bowl, add tomatoes, green chillies, coriander leaves, turmeric powder, cumin powder, coriander powder, red chilli powder, garam masala powder and sufficient water and mix well.
- Add salt and, mix well to form a batter of semi-thick consistency.
- Heat a non-stick tawa, brush a little oil pour small portions of the batter on it to form small discs. Drizzle some oil and cook on low heat, turning sides, till evenly cooked on both sides.
- Cut out rounds of bread slices with a large round cookie cutter. Apply butter and green chutney on each roundel.
- Place 1 omelette on each of 4 roundels, and place a few tomato slices on them. Sprinkle chaat masala on top. Cover with the remaining slices of chutney side downwards.
- Secure each sandwich with a cherry tomato skewered on a toothpick arrange them on a serving plate and serve.
