Ingredients 

  • 2 cups gram flour (besan)
  • 2 medium tomatoes finely chopped
  • 8 white bread slices
  • 1-2 green chillies, finely chopped
  • 1 tablespoon fresh coriander leaves, finely chopped
  • ½ teaspoon turmeric powder
  • ¼ teaspoon cumin powder
  • ½ teaspoon coriander powder
  • ½ teaspoon red chilli powder
  • ½ teaspoon garam masala powder
  • Salt to taste
  • Oil for greasing and drizzling
  • Butter as required
  • Green chutney as required
  • A few roundels of tomato
  • Chaat masala for sprinkling
  • Cherry tomatoes for garnish

Method

  1. Take fine besan in a large bowl, add tomatoes, green chillies, coriander leaves, turmeric powder, cumin powder, coriander powder, red chilli powder, garam masala powder and sufficient water and mix well.
  2. Add salt and, mix well to form a batter of semi-thick consistency.
  3. Heat a non-stick tawa, brush a little oil pour small portions of the batter on it to form small discs. Drizzle some oil and cook on low heat, turning sides, till evenly cooked on both sides.
  4. Cut out rounds of bread slices with a large round cookie cutter. Apply butter and green chutney on each roundel.
  5. Place 1 omelette on each of 4 roundels, and place a few tomato slices on them. Sprinkle chaat masala on top. Cover with the remaining slices of chutney side downwards.
  6. Secure each sandwich with a cherry tomato skewered on a toothpick arrange them on a serving plate and serve.
