Till a few years ago, cauliflower used to be a vegetable that is only available during winter but of late cauliflower is available year around especially in big cities. Referred to as the aristocrat of the cabbage family, the flowers are also eaten raw at times. While buying, look for fresh cauliflowers with compact white heads and green fresh looking leaves. Avoid and reject any loose or spread out heads – they are a sure sign of over maturity.

Ingredients for Subz Mirch Do Pyaza Recipe

  • Cauliflower parboiled 8-10 florets

  • Carrots 1/2 inch sized diamonds, parboiled 2 medium

  • Bhavnagri green chillies 8-10

  • French beans 1/2 inch diamonds, parboiled 4-5

  • Green capsicum 1/2 inch pieces 1 medium

  • Oil 2 tablespoons

  • Cumin seeds 1 teaspoon

  • Onions sliced 2 medium

  • Sambhar onions peeled 8-10

  • Ginger-garlic paste 1 tablespoon

  • Coriander powder 1 tablespoon

  • Coriander powder 1 tablespoon

  • Turmeric powder 1/2 teaspoon

  • Cumin powder roasted 1 teaspoon

  • Green chillies mild variety chopped 4-6

  • Salt to taste

  • Lemon juice 1 tablespoon

  • Yogurt 1 cup

  • Poppy seeds (khuskhus/posto) 2 tablespoons

  • Fresh coriander leaves chopped a few sprigs

  • Tomatoes thickly sliced 2 medium

  • Garam masala powder 1 teaspoon

  • Spring onions with greens sliced 2

Method

Step 1

Heat a pan and pour two tablespoons of oil in it. Add cumin seeds and add sliced onions.

Step 2

Sauté and add sambhar onions. Sauté for a minute. Add ginger-garlic paste, coriander powder, turmeric powder, roasted cumin powder, half of the chopped green chillies and stir well.

Step 3

Add cauliflower florets and carrots. Sauté for two to three minutes. Add one cup of water and stir. Leave to cook on low heat for five minutes.

Step 4

Meanwhile, heat sufficient oil in a kadai and deep fry bhavnagri mirchis. Drain and remove into a bowl.

Step 5

Add salt to taste, lemon juice and yogurt. Mix well and leave to marinate for an hour. Grind together khus khus, remaining chopped green chillies and half of the coriander leaves.
