Corn was indigenous to America, but is now grown throughout the world. It is used as a vegetable, briefly boiled or roasted or eaten with butter. And it would also interest you to know that the favourite popcorn, made by popping the small corn kernels, is a wholesome cereal food and is easily digested. Besides this, corn sees its use in various other ways – salads, soups, subzis and even sweets too!

Ingredients for Corn Tomato Bharta on Toast Recipe

  • Frozen Corn Kernels 1 cups

  • Tomatoes 2 medium

  • Brinjal roasted and peeled 1 large

  • Ghee 2 tablespoons

  • Cumin seeds 1 teaspoon

  • Garlic 5-6 cloves

  • Ginger 1 inch piece

  • Onion 1 medium

  • Green chillies finely chopped 1-2

  • Red chilli powder 1/2 teaspoon

  • Coriander powder 1 teaspoon

  • Cumin powder 1 teaspoon

  • Turmeric powder a pinch

  • Dried mango powder 1/2 teaspoon

  • Chaat masala 1/2 teaspoon

  • Juice of 1 lemon wedge

  • Fresh mint leaves 15-20

  • Salt to taste

  • French loaf (baguette) 1

  • Onion seeds (kalonji) to sprinkle

  • Breadcrumbs to garnish

Method

Step 1

Heat ghee in a non-stick kadai, add cumin seeds and sauté till fragrant. Finely chop garlic and ginger and add to the kadai and sauté for a minute.

Step 2

Finely chop onion, add to the kadai and sauté for 2-3 minutes. Finely chop tomatoes and add to the kadai, mix well and sauté for 3-4 minutes.

Step 3

Coarsely grind corn and add to the kadai. Add green chillies, red chilli powder, coriander powder, cumin powder, turmeric powder, dried mango powder, chaat masala and mix well.

Step 4

Chop brinjal finely and add to the kadai. Add lemon juice and mix.

Step 5

Finely chop mint leaves, add to the kadai and mix well. Add salt and mix and cook for 2-3 minutes.

Step 6

Cut the French loaf diagonally into 8 slices. Arrange the slices on a serving plate. Spread the bharta over them.

Step 7

Sprinkle onion seeds and garnish with bread crumbs. Serve immediately.
