Ingredients
- 1 medium watermelon
- 2-3 tablespoons oil
- 1 teaspoon cumin seeds
- 2 tablespoons chopped garlic
- 1 tablespoon chopped ginger
- 2 green chillies, finely chopped
- 2 medium onions, finely chopped
- ½ teaspoon turmeric powder
- 1 teaspoon red chilli powder
- ½ teaspoon coriander powder
- ½ teaspoon cumin powder
- Salt to taste
- 1 tablespoon lemon juice
- 1 teaspoon sugar
- 2-3 tablespoons chopped fresh coriander leaves
- Fresh coriander sprig to garnish
Method
- Thickly peel the watermelon along with the white part, remove the outer skin, and cut the white part into 1 inch pieces. Wash them well.
- Heat oil in a non-stick pan, add cumin seeds, garlic, ginger and green chillies, mix and sauté for 1-2 minutes. Add onions, mix and saute till onions turn translucent.
- Add turmeric powder, red chilli powder, coriander powder, cumin powder and salt, mix and sauté for 1 minute.
- Add watermelon rind, mix well and saute for 1 minute. Add ¼ cup water, cover and cook on medium heat for 10-15 minutes, stirring in between.
- Add lemon juice, sugar and coriander leaves, mix well and cook for 1 minute.
- Transfer into a serving bowl, garnish with coriander sprig and serve hot.
