Ingredients 

  • 1 medium watermelon
  • 2-3 tablespoons oil
  • 1 teaspoon cumin seeds
  • 2 tablespoons chopped garlic
  • 1 tablespoon chopped ginger
  • 2 green chillies, finely chopped
  • 2 medium onions, finely chopped
  • ½ teaspoon turmeric powder
  • 1 teaspoon red chilli powder
  • ½ teaspoon coriander powder
  • ½ teaspoon cumin powder
  • Salt to taste
  • 1 tablespoon lemon juice
  • 1 teaspoon sugar
  • 2-3 tablespoons chopped fresh coriander leaves 
  • Fresh coriander sprig to garnish

Method

  1. Thickly peel the watermelon along with the white part, remove the outer skin, and cut the white part into 1 inch pieces.  Wash them well.
  2. Heat oil in a non-stick pan, add cumin seeds, garlic, ginger and green chillies, mix and sauté for 1-2 minutes. Add onions, mix and saute till onions turn translucent.
  3. Add turmeric powder, red chilli powder, coriander powder, cumin powder and salt, mix and sauté for 1 minute.
  4. Add watermelon rind, mix well and saute for 1 minute. Add ¼ cup water, cover and cook on medium heat for 10-15 minutes, stirring in between.
  5. Add lemon juice, sugar and coriander leaves, mix well and cook for 1 minute.
  6. Transfer into a serving bowl, garnish with coriander sprig and serve hot.
