Ingredients
- Dough
- 2 cups refined flour (maida)
- ¼ cup milk powder
- 1½ teaspoons salt
- 2 teaspoons instant yeast
- 2 tablespoons butter
- 1 egg
- Stuffing
- 2 tablespoons coconut oil
- 8-10 garlic cloves, thinly sliced
- 10-12 curry leaves
- 5-6 medium onion, sliced
- Salt to taste
- 1 teaspoon red chilli powder
- ½ teaspoon red chilli flakes
- ½ teaspoon clove powder
- ½ teaspoon cinnamon powder
- 2 teaspoons tamarind paste
- 2 tablespoons sugar
- Egg wash as required
Method
- Take refined flour in a large bowl, add milk powder, salt, instant dry yeast, butter and mix.
- Make well in a center, break an egg into it and mix well. Add 1 cup lukewarm water and knead into a soft dough. Cover with a damp muslin cloth and set aside to prove for 1-1.5 hours.
- Heat coconut oil in a pan, add garlic and curry leaves, mix and sauté for 1 minute. Add onions, mix and saute on medium heat till translucent.
- Add salt, red chilli powder, red chilli flakes, clove powder, cinnamon powder and tamarind paste, mix well and saute for 2-3 minutes. Add ¼ cup water and mix and cook for 1-2 minutes.
- Add sugar, mix and sauté on medium heat till sugar dissolves. Take the pan off the heat and spread the mixture in a bowl and allow to cool completely.
- Knockback the dough and knead once. Divide the dough into 6-8 portions and shape each portion into a ball. Roll out each portion into a disc and place a portion of the stuffing in the centre. fold the sides to the centre to make a parcel. Arrange them on a baking tray lined with butter paper, cover with a damp muslin cloth and set aside to prove for 20-25 minutes.
- Meanwhile, preheat oven to 180º C.
- Brush each parcel with egg wash, place the tray in the preheated oven and bake for 20-25 minutes.
- Bring the tray out of the oven and allow to cool slightly. Arrange the parcels on a serving plate and serve.
