Seeni Sambol Bread

Ingredients

  • Dough
  • 2 cups refined flour (maida)
  • ¼ cup milk powder
  • 1½ teaspoons salt 
  • 2 teaspoons instant yeast 
  • 2 tablespoons butter
  • 1 egg
  • Stuffing
  • 2 tablespoons coconut oil
  • 8-10 garlic cloves, thinly sliced
  • 10-12 curry leaves
  • 5-6 medium onion, sliced  
  • Salt to taste
  • 1 teaspoon red chilli powder
  • ½ teaspoon red chilli flakes
  • ½ teaspoon clove powder
  • ½ teaspoon cinnamon powder
  • 2 teaspoons tamarind paste
  • 2 tablespoons sugar
  • Egg wash as required

Method

  1. Take refined flour in a large bowl, add milk powder, salt, instant dry yeast, butter and mix.
  2. Make well in a center, break an egg into it and mix well. Add 1 cup lukewarm water and knead into a soft dough. Cover with a damp muslin cloth and set aside to prove for  1-1.5 hours.
  3. Heat coconut oil in a pan, add garlic and curry leaves, mix and sauté for 1 minute. Add onions, mix and saute on medium heat till translucent.  
  4. Add salt, red chilli powder, red chilli flakes, clove powder, cinnamon powder and tamarind paste, mix well and saute for 2-3 minutes. Add ¼ cup water and mix and cook for 1-2 minutes.
  5. Add sugar, mix and sauté on medium heat till sugar dissolves. Take the pan off the heat and spread the mixture in a bowl and allow to cool completely.
  6. Knockback the dough and knead once. Divide the dough into 6-8 portions and shape each portion into a ball. Roll out each portion into a disc and place a portion of the stuffing in the centre.  fold the sides to the centre to make a parcel. Arrange them on a baking tray lined with butter paper, cover with a damp muslin cloth and set aside to prove for 20-25 minutes.
  7. Meanwhile, preheat oven to 180º C.
  8. Brush each parcel with egg wash, place the tray in the preheated oven and bake for 20-25 minutes.
  9. Bring the tray out of the oven and allow to cool slightly. Arrange the parcels on a serving plate and serve.
