Paneer Bhuna Masala

The marinated paneer when cooked in mustard oil adds a unique taste to this dish. They are then cooked in a spicy, sharp tasting gravy. Make sure you have butter naans or rotis to get started.

Ingredients

  • 400 grams cottage cheese (paneer), cut into 1 inch cubes
  • ½ cup grated cottage cheese (paneer)
  • ½ cup yogurt
  • Salt to taste
  • 2 tablespoons roasted gram flour (besan)
  • 1 teaspoon cumin powder
  • ¾ teaspoon coriander powder
  • ½ teaspoon black pepper powder
  • ½ teaspoon garam masala powder
  • 1 teaspoon red chilli powder
  • ¼ teaspoon turmeric powder
  • 1 tablespoon ginger-garlic paste
  • 2-3 tablespoons mustard oil
  • Gravy
  • 2-3 tablespoons mustard oil
  • 1 teaspoon cumin seeds
  • 2 star anise
  • 1 inch cinnamon 
  • 3-4 green cardamoms
  • 4-5 cloves
  • 6-8 black peppercorns
  • 2 large onions, finely chopped
  • 1 tablespoon ginger-garlic paste
  • 2 large tomatoes, finely chopped
  • Salt to taste
  • 1 teaspoon red chilli powder
  • ½ teaspoon garam masala powder
  • ¼ teaspoon turmeric powder
  • 1½ teaspoons coriander powder
  • 2-3 green chillies, slit
  • 1 tablespoon chopped fresh coriander leaves

Method

  1. Take yogurt in a large bowl, add salt, roasted gram flour, cumin powder, coriander powder, black pepper powder, garam masala powder, red chilli powder, turmeric powder and ginger-garlic paste and whisk well. Add cottage cheese cubes and mix gently till each cube is well coated with the masala. Set aside to marinate for 15-20 minutes. 
  2. Heat mustard oil in a pan. Add cottage cheese cubes and cook, turning sides, for 2-3 minutes. Take the pan off the heat. 
  3. To make the gravy, heat mustard oil in a wide pan till it smokes. Reduce heat, add cumin seeds, star anise, cinnamon, green cardamoms, cloves and black peppercorns, mix and sauté till fragrant.
  4. Add onions, mix and saute till golden brown. Add ginger-garlic paste, mix well and saute for 1-2 minutes. 
  5. Add tomatoes and mix well.  Add salt, mix and saute till tomatoes turn soft and pulpy. 
  6. Add red chilli powder, garam masala powder, turmeric powder and coriander powder, mix well and sauté for 1-2 minutes. 
  7. Add 1 cup water, mix and cook for 2-3 minutes. Add grated cottage cheese, mix well. and cook for 1-2 minutes. 
  8. Add cottage cubes and mix gently till well combined. Add green chillies, and coriander leaves, mix well and cook for 1-2 minutes. 
  9. Transfer into a serving bowl and serve hot.
