Ingredients
- 4-5 tablespoons roughly chopped green garlic stalks
- 2-3 tablespoons roughly chopped green garlic bulbs
- 1½ cups boiled chickpeas
- 2 tablespoons tahini
- 2-3 tablespoons extra virgin olive oil + to drizzle
- Salt to taste
- 1 tablespoon lemon juice
- ¼ cup boiled chickpea water
- Finely chopped green garlic stalks to sprinkle
- Lavash for serving
Method
- Put boiled chickpeas in a grinder jar, add green garlic stalks, green garlic bulbs, tahini, extra virgin olive oil, salt and lemon juice and grind coarsely. Add boiled chickpea water and grind to a smooth paste.
- Transfer the hummus into a serving bowl and make a create a well in the centre. Drizzle extra virgin olive oil generously into the well, sprinkle green garlic stalks and serve with lavash.
