Green Garlic Hummus

Creamy hummus with a slight twist makes it extra enjoyable. When fresh green garlic is in season, you must make the most of it and use it to make this Middle Eastern dip that is so very delicious.

Ingredients

  • 4-5 tablespoons roughly chopped green garlic stalks
  • 2-3 tablespoons roughly chopped green garlic bulbs
  • 1½ cups boiled chickpeas
  • 2 tablespoons tahini
  • 2-3 tablespoons extra virgin olive oil + to drizzle
  • Salt to taste
  • 1 tablespoon lemon juice
  • ¼ cup boiled chickpea water
  • Finely chopped green garlic stalks to sprinkle
  • Lavash for serving

Method

  1. Put boiled chickpeas in a grinder jar, add green garlic stalks, green garlic bulbs, tahini, extra virgin olive oil, salt and lemon juice and grind coarsely. Add boiled chickpea water and grind to a smooth paste.
  2. Transfer the hummus into a serving bowl and make a create a well in the centre. Drizzle extra virgin olive oil generously into the well, sprinkle green garlic stalks and serve with lavash.
