Ingredients
- 400 grams boneless chicken leg, cut into 1-inch pieces
- Salt to taste
- 1½ teaspoons red chilli powder
- Crushed black peppercorns to taste
- 10-15 curry leaves, shredded
- 1 teaspoon garam masala powder
- 1½ tablespoons ginger-garlic paste
- 2 teaspoons red chilli paste
- 2-3 tablespoons yogurt
- 2-3 tablespoons rice flour
- 2 tablespoons oil + to deep-fry
- 1½ tablespoons chopped garlic
- 3-4 green chillies, slit
- 15-20 curry leaves
- 2 green chillies, chopped
Method
- Take chicken pieces in a bowl, add salt, red chilli powder, crushed black peppercorns, curry leaves, garam masala powder and ginger-garlic paste and mix well.
- Add red chilli paste and mix well. Add yogurt and mix well. Set aside to marinate for 10-15 minutes.
- Heat sufficient oil in a kadai.
- Add rice flour and mix well. Slide the chicken pieces, a few at a time, into hot oil gently and deep-fry on medium heat till crisp. Drain on absorbent paper.
- Heat 2 tablespoons oil in a pan, add garlic, slit green chilli and curry leaves, mix and sauté for 30 seconds.
- Add chicken pieces and chopped green chillies and toss well.
- Transfer into a serving bowl and serve hot.
