Ingredients
- 1 cup chopped fresh fenugreek leaves (methi)
- 1 cup whole wheat flour (atta)
- 1 cup khapli wheat flour
- 1 teaspoon red chilli powder
- ½ teaspoon turmeric powder
- 2 teaspoons coriander powder
- 2 teaspoons roasted and crushed cumin seeds
- 1 teaspoon garam masala powder
- ½ teaspoon asafoetida (hing)
- 3 teaspoons toasted white sesame seeds
- 4 teaspoons ginger-green chilli paste
- Salt to taste
- 2 tablespoons oil
Method
- Take whole wheat flour in a bowl, add khapli wheat flour, red chilli powder, turmeric powder, coriander powder, roasted and crushed cumin seeds, garam masala powder, asafoetida, white sesame seeds, ginger-green chilli paste, fenugreek leaves, salt and oil and mix well.
- Add ½ cup water and knead into a stiff dough. Cover with a moist muslin cloth and rest for 10-15 minutes.
- Roll the dough into a thick sheet and cut into roundels with a cookie cutter.
- Heat a non-stick tawa. Place the dough roundels on the tawa and cook on low heat for 4-5 minutes.
Flip, press and cook on low heat for 5-6 minutes. Drizzle some ghee and cook for 2-3 minutes. Flip, drizzle some more ghee and cook, pressing, for 2-3 minutes. - Allow to cool completely, arrange them on a serving plate and serve.
