Ingredients
- 1¼ cups grated mixed cheese
- 2 cups refined flour (maida) + to sprinkle
- 2 tablespoons yogurt
- 2 teaspoons castor sugar
- 1½ teaspoons salt
- ¾ tablespoon instant dry yeast
- ¼ teaspoon baking soda
- ¾ cup milk
- ½ teaspoon red chilli flakes
- ½ teaspoon chopped fresh coriander leaves
- 4 butter pieces, at room temperature
- Onion seeds (kalaunji) to sprinkle
- Melted butter to brush
- Green chutney to serve
Method
- Sift refined flour in a bowl, add yogurt, castor sugar, salt, instant dry yeast and baking soda and milk, mix well and knead into a soft dough. Cover with a moist muslin cloth and set aside for 1 hour.
- Preheat oven to 200° C.
- To make stuffing, take mixed cheese in a bowl, add red chilli flakes and coriander leaves and mix well.
- Divide the dough into 4 equal portions and roll into balls. Dust some refined flour and make dent in the centre of each ball and place some stuffing in it. Place a cube of the butter in the centre, gather the edges and seal properly. Dust some more refined flour on the worktop and roll into a thick disc.
- Spray some water on top of each disc and sprinkle onion seeds on top. Press lightly.
- Place a piece of stone on oven rack, place 2 kulachas, at a time, over it. Bake in preheated oven for 10-12 minutes.
- Bring the kulchas out of the oven, brush melted butter over them. Cut each kulcha into 4 equal triangles, arrange them on serving plates and serve hot with green chutney.
