Ingredients
- 2 cups refined flour (maida) + for dusting
- ½ teaspoon instant dry yeast
- Salt to taste
- ½ teaspoon sugar
- ¼ cup olive oil + for greasing + for drizzling
- Pizza sauce as required
- 5-6 yellow cherry tomatoes, halved
- 4-5 red cherry tomatoes, halved
- 4-5 pitted black olives
- 4-5 pitted green olives
- 150 grams mozzarella cheese
- A few sprigs of fresh thyme
- Fresh basil sprigs for garnish
Method
- Take refined flour in a large bowl, add instant dry yeast, salt and sugar and mix well.
- Take ¾ cup lukewarm water in another bowl, add olive oil and whisk well. Pour this into the flour mixture, mix and knead into a soft dough. Shape it into a ball. Grease a bowl with some olive oil, place the dough in it, cover with a damp muslin cloth and set aside to prove for 40-45 minutes or till the dough doubles in size.
- Knock back the dough and knead it lightly. Dust the worktop with refined flour. Place the dough on it and roll it into a thick disc.
- Grease an iron skillet with some olive oil. Place the dough disc in it, cover with a damp muslin cloth and set aside to prove for 15-20 minutes.
- Preheat the oven to 200º C.
- Make a few holes on the surface of focaccia, spread the pizza sauce all over, arrange some yellow cherry tomatoes, red cherry tomatoes, black olives, green olives and some sprinkle salt. Tear small pieces of mozzarella cheese and arrange on the focaccia. Sprinkle a few sprigs of thyme and drizzle olive. Place the skillet in the preheated oven and bake for 20-25 minutes.
- Bring the skillet out of the oven, place the pizza on a serving plate and drizzle some olive oil. Garnish with fresh basil leaves. Cut into squares and serve.
