Ingredients
- 3 cups shredded fresh spinach (palak)
- 200 grams cottage cheese (paneer), cut into 1 cm cubes
- 4 white bread slices
- 4 tablespoons olive oil
- 4 tablespoons chopped garlic
- 2 teaspoon red chilli flakes
- Salt to taste
- 4 tablespoons butter
- 2 tablespoon chopped fresh parsley
- Grated mixed cheese to sprinkle
- Tomato ketchup for serving
Method
- Preheat oven to 180° C.
- Heat olive oil in a small non-stick pan, add 2 tablespoons garlic and sauté for 30 seconds.
- Add 1 teaspoon red chilli flakes and mix well. Add spinach and salt, mix well and cook for 2-3 minutes.
- Add cottage cheese cubes, mix gently and cook for 2-3 minutes.
- Take butter in a bowl, add 2 tablespoons garlic, 1 teaspoon red chilli flakes and parsley and mix well.
- Place 4 bread slices on a tray and spread the butter-garlic mixture evenly over them. Keep the tray in the preheated oven and toast for 4-5 minutes.
- Take the tray out of oven and spread the cottage cheese-spinach mixture evenly on the bread slices.
- Sprinkle mixed cheese on top, keep the tray back in the oven and bake for 4-5 minutes or till cheese melts.
- Bring the tray out of the oven, cut each toast into triangles, arrange them on a serving platter and serve hot with tomato ketchup.
