Palak Paneer Toast

Method

  1. Preheat oven to 180° C.
  2. Heat olive oil in a small non-stick pan, add 2 tablespoons garlic and sauté for 30 seconds.
  3. Add 1 teaspoon red chilli flakes and mix well. Add spinach and salt, mix well and cook for 2-3 minutes.
  4. Add cottage cheese cubes, mix gently and cook for 2-3 minutes.
  5. Take butter in a bowl, add 2 tablespoons garlic, 1 teaspoon red chilli flakes and parsley and mix well.
  6. Place 4 bread slices on a tray and spread the butter-garlic mixture evenly over them. Keep the tray in the preheated oven and toast for 4-5 minutes.
  7. Take the tray out of oven and spread the cottage cheese-spinach mixture evenly on the bread slices.
  8. Sprinkle mixed cheese on top, keep the tray back in the oven and bake for 4-5 minutes or till cheese melts.
  9. Bring the tray out of the oven, cut each toast into triangles, arrange them on a serving platter and serve hot with tomato ketchup.
