Ingredients

  • Badi
  • 1½ cups soaked and drained split skinless green gram (dhuli moong dal)
  • Salt to taste
  • 2 tablespoons chopped fresh coriander leaves
  • 1 medium onion, chopped
  • Oil to grease
  • Salan
  • 3 tablespoons mustard oil
  • 1½ teaspoons cumin seeds
  • 1½ cups onion paste
  • 1½ tablespoons ginger-garlic paste
  • ¼ teaspoon turmeric powder
  • 1½ teaspoons red chilli powder
  • 1 tablespoon coriander powder
  • 1½ teaspoons cumin powder
  • 1 teaspoon garam masala powder
  • Salt to taste
  • 2-3 tablespoons chopped fresh coriander leaves + for garnish
  • Steamed rice for serving

Method

  1. Transfer split green gram into a grinder jar, add ½ cup water and grind to fine mixture.
  2. Transfer the mixture into a bowl, add salt, coriander leaves and onion and mix well.
  3. Heat sufficient water in a steamer.
  4. Grease a thali with some oil and drop small portions of the ground mixture on it keeping some distance between each.
  5. Place the thali in the steamer and steam for 10-15 minutes.
  6. Meanwhile heat mustard oil in a kadai till it begins to smoke. Cool slightly, add cumin seeds and once they start to change colour, add onion paste, mix and saute till golden brown.
  7. Add ginger-garlic paste, mix, and sauté for 1 minute.
  8. Add turmeric powder, red chilli powder, coriander powder, cumin powder and garam masala powder and mix well.
  9. Add 3 cups water and mix well. Once the mixture comes to a boil, add salt and mix well. Lower the heat, cover and cook for 4-5 minutes.
  10. Add steamed badi and mix with a light hand. Cook on medium heat for 4-5 minutes.
  11. Add coriander leaves and mix well.
  12. Transfer into a serving bowl, sprinkle coriander leaves and serve hot with steamed rice.
