Ingredients

  • 2-3 wafer potatoes
  • Oil for deep frying
  • Peri Peri Spice Mix
  • 2-3 tablespoons coriander seeds
  • 2 teaspoons cumin seeds
  • 10-15 black peppercorns
  • 2-3 bay leaves
  • 4-5 dried red chillies
  • 2 teaspoons dried garlic flakes
  • 1 teaspoon dried oregano
  • 1 teaspoon dried parsley
  • Salt to taste
  • 2-3 teaspoons onion powder

Method

  1. Heat a non-stick pan, add coriander seeds, cumin seeds, black peppercorns, bay leaves and dried red chillies, mix and dry roast till fragrant.
  2. Allow to cool completely. Transfer the roasted ingredients into a grinder jar, add dried garlic flakes, dried oregano, dried parsley, salt and onion powder and grind to fine powder.
  3. Slice wafer potatoes thinly directly into water. Drain, spread in single layer on a kitchen towel, place another kitchen towel over and pat dry.
  4. Heat sufficient oil in a kadai, add the potato slices, a few at a time, and deep-fry till crisp.
  5. Drain in to a bowl, sprinkle some ground spice mix while the chips are still hot and toss well.
  6. Cool completely, transfer into a serving bowl and serve, or store in air tight container to serve when required.
