Ingredients

  • 4 large potatoes, boiled, peeled and cut into ½ inch pieces
  • 8-10 garlic cloves
  • 4 dried red chillies
  • 6 medium tomatoes, quartered
  • 4 tablespoons oil
  • 1 teaspoon onion seeds (kalaunji)
  • 2 teaspoons red chilli powder
  • 2 teaspoons coriander powder
  • Crushed black peppercorns to taste
  • Salt to taste
  • 1 teaspoon castor sugar
  • Crushed instant noodles to sprinkle
  • Instant noodles spice mix to sprinkle
  • Chopped onions to sprinkle
  • Chopped green chillies to sprinkle
  • Chopped fresh coriander leaves to sprinkle

Method

  1. Boil sufficient water in a kadai, add garlic cloves, dried red chillies and tomatoes, mix and boil for 6-8 minutes.
  2. Drain the ingredients, remove tomato skin and let the mixture cool. Transfer into a grinder jar, add ½ cup water and grind to fine paste.
  3. Heat oil in a shallow non-stick pan, add onion seeds, red chilli powder, coriander powder and crushed black peppercorns and mix well.
  4. Add ground paste. Rinse the grinder jar with 1 cup water and add and mix well. Add salt and castor sugar, mix well and let the mixture come to a boil.
  5. Add potatoes, mix well and cook for 4-5 minutes.
  6. Transfer potato gravy into a serving bowl, sprinkle instant noodles, spice mix, onions, green chillies and coriander leaves on top. Serve hot.
