Ingredients
- 4 large potatoes, boiled, peeled and cut into ½ inch pieces
- 8-10 garlic cloves
- 4 dried red chillies
- 6 medium tomatoes, quartered
- 4 tablespoons oil
- 1 teaspoon onion seeds (kalaunji)
- 2 teaspoons red chilli powder
- 2 teaspoons coriander powder
- Crushed black peppercorns to taste
- Salt to taste
- 1 teaspoon castor sugar
- Crushed instant noodles to sprinkle
- Instant noodles spice mix to sprinkle
- Chopped onions to sprinkle
- Chopped green chillies to sprinkle
- Chopped fresh coriander leaves to sprinkle
Method
- Boil sufficient water in a kadai, add garlic cloves, dried red chillies and tomatoes, mix and boil for 6-8 minutes.
- Drain the ingredients, remove tomato skin and let the mixture cool. Transfer into a grinder jar, add ½ cup water and grind to fine paste.
- Heat oil in a shallow non-stick pan, add onion seeds, red chilli powder, coriander powder and crushed black peppercorns and mix well.
- Add ground paste. Rinse the grinder jar with 1 cup water and add and mix well. Add salt and castor sugar, mix well and let the mixture come to a boil.
- Add potatoes, mix well and cook for 4-5 minutes.
- Transfer potato gravy into a serving bowl, sprinkle instant noodles, spice mix, onions, green chillies and coriander leaves on top. Serve hot.
