Ingredients list for Vegetable Kadhi
- 2 tablespoons Gram flour (besan)
- 1 cup Yogurt
- 7-8 small Cauliflower florets
- 2-3 French beans cut into diagonal pieces
- 1/2 medium Carrot cut into small pieces
- 2 pinches Turmeric powder
- to taste Salt
- 1 teaspoon Green chillies chopped
- 2 tablespoons Extra virgin olive oil
- 1 tablespoon Garlic chopped
- 1 tablespoon Ginger chopped
- 1 teaspoon Cumin seeds
- 1 teaspoon Mustard seeds
- 15-20 Curry leaves
- 1/4 cup Green peas
- 1 medium Onion finely chopped
- 1 tablespoon Dried fenugreek leaves (kasoori methi)
- 1 medium Tomato finely chopped
- 1 cup Cottage cheese (paneer) cubes
- 2 tablespoons Fresh coriander leaves chopped
Method
- Place yogurt in a bowl, add gram flour, a pinch of turmeric powder, salt, green chillies, 2 cups water and whisk it and keep it aside. Heat extra virgin olive oil in a deep non stick pan. Add garlic, ginger, cumin seeds, mustard seeds and saute till fragrant.
- Add carrot, beans, cauliflower florets, curry leaves, green peas, onions and mix well.Add a pinch turmeric powder, salt, dried fenugreek leaves and sauté for 2 minutes. Add tomato and sauté for 1 minute.
- Add yogurt mixture and mix well and cook for 2-3 minutes. Add cottage cheese and coriander leaves and mix well. Let it come to a boil. Serve hot.
