Indian cuisine comprises of a number of regional cuisines.  The diversity in soil type, climate, culture, ethnic group and occupations, these cuisines differ from each other mainly due to the use of locally available spices, herbs, vegetables and fruits. Indian food is also influenced by religious and cultural choices and traditions. 
Foreign invasions, trade relations and colonialism had introduced certain foods to the country like potato, chillies and breadfruit.

Ingredients for Vegetable Kadhi Recipe

  • Gram flour (besan) 2 tablespoons

  • Yogurt 1 cup

  • Cauliflower florets 7-8 small

  • French beans cut into diagonal pieces 2-3

  • Carrot cut into small pieces 1/2 medium

  • Turmeric powder 2 pinches

  • Salt to taste

  • Green chillies chopped 1 teaspoon

  • Extra virgin olive oil 2 tablespoons

  • Garlic chopped 1 tablespoon

  • Ginger chopped 1 tablespoon

  • Cumin seeds 1 teaspoon

  • Mustard seeds 1 teaspoon

  • Curry leaves 15-20

  • Green peas 1/4 cup

  • Onion finely chopped 1 medium

  • Dried fenugreek leaves (kasoori methi) 1 tablespoon

  • Tomato finely chopped 1 medium

  • Cottage cheese (paneer) cubes 1 cup

  • Fresh coriander leaves chopped 2 tablespoons

Method

Step 1

Place yogurt in a bowl, add gram flour, a pinch of turmeric powder, salt, green chillies, 2 cups water and whisk it and keep it aside. Heat extra virgin olive oil in a deep non stick pan. Add garlic, ginger, cumin seeds, mustard seeds and saute till fragrant.

Step 2

Add carrot, beans, cauliflower florets, curry leaves, green peas, onions and mix well.Add a pinch turmeric powder, salt, dried fenugreek leaves and sauté for 2 minutes. Add tomato and sauté for 1 minute.

Step 3

Add yogurt mixture and mix well and cook for 2-3 minutes. Add cottage cheese and coriander leaves and mix well. Let it come to a boil. Serve hot.
