Ingredients
- 2 cups whole green gram (sabut moong) soaked overnight and drained
- ¼ cup moong sprouts
- ¼ cup moth sprouts
- 2 medium potatoes boiled, peeled and mashed
- 1 tablespoon oil + for garnishing
- 1 teaspoon mustard seeds
- 1 teaspoon black gram split (urad dal dhuli)
- 4-6 curry leaves
- 4 green chillies finely chopped
- 1 medium onion sliced
- Salt to taste
- A pinch of sugar
- ¼ teaspoon turmeric powder
- ½ inch ginger chopped
- ½ teaspoon cumin seeds
Method
- Heat 1 tablespoon oil in a non-stick pan. Add mustard seeds and split black gram and let mustard seeds splutter. Add curry leaves and ½ the green chillies and sauté for 10 seconds.
- Add onion, salt and sugar and sauté till onion turns golden. Add turmeric powder, moong sprouts and moth sprouts and mix. Add potatoes, mix and cook for 1-2 minutes.
- Add some water, mix and cook for 1-2 minutes.
- To prepare moong batter, grind together soaked green gram, ginger, remaining green chillies, salt and cumin seeds along with some water to a thick and smooth batter. Transfer into a bowl.
- Heat a non-stick tawa. Pour a ladleful of batter and spread with the back of the ladle to a large thin disc. Drizzle some oil on the edges of the disc and cook till the underside is golden.Put some sprout and potato mixture in the center and fold.
- Make more dosa in the same way.
- Serve hot.
