Also called by names like aubergine and eggplant, this purple hued fleshy vegetable is a versatile thing and fun to cook with. Dish-up a very traditional bharta with it, bake a lasagna with parmesan and eggplant or just fry it for a great accompaniment with dal-chawal, brinjal is versatile. To choose one without seeds, pick the lighter one with a smooth shiny skin.

Ingredients for Mixed Vegetable Curry Recipe

  • Brinjal , roasted 1 large

  • Carrot , cubed 1 medium

  • Potatoes , cubed 2 medium

  • Green peas , boiled 1/4 cup

  • Oil 3 tablespoons

  • Cloves 7-8

  • Mustard seeds 1 teaspoon

  • Curry leaves 20-25

  • Tomato , chopped 1 medium

  • Turmeric powder 1/4 teaspoon

  • Coriander powder 2 teaspoons

  • Cumin powder 1 teaspoon

  • Red chilli powder 1 teaspoon

  • Salt to taste

  • Ginger , roughly chopped 1/2 inch

  • Coconut milk 1/2 cup

  • Fresh coriander sprig for garnish

Method

Step 1

Heat oil in a pan, add cloves and saute till fragrant. Add mustard seeds and curry leaves and saute till seeds splutter. Add tomato, mix and saute for 2 minutes.

Step 2

Add turmeric powder, coriander powder, cumin powder and red chilli powder and mix. Add 1½ cups water and mix. Add carrot, potato and salt, mix, cover and cook.

Step 3

Put ginger in a grinder jar, add roasted brinjal and 2 tbsps water and grind. Add this to the pan and mix well. Add coconut milk and green peas and mix well. Cover and cook till potatoes are done.

Step 4

Transfer into a serving bowl, garnish with coriander sprig and serve hot.
