Ingredients list for Mixed Vegetable Curry

  • 1 large Brinjal , roasted
  • 1 medium Carrot , cubed
  • 2 medium Potatoes , cubed
  • 1/4 cup Green peas , boiled
  • 3 tablespoons Oil
  • 7-8 Cloves
  • 1 teaspoon Mustard seeds
  • 20-25 Curry leaves
  • 1 medium Tomato , chopped
  • 1/4 teaspoon Turmeric powder
  • 2 teaspoons Coriander powder
  • 1 teaspoon Cumin powder
  • 1 teaspoon Red chilli powder
  • to taste Salt
  • 1/2 inch Ginger , roughly chopped
  • 1/2 cup Coconut milk
  • for garnish Fresh coriander sprig


  1. Heat oil in a pan, add cloves and saute till fragrant. Add mustard seeds and curry leaves and saute till seeds splutter. Add tomato, mix and saute for 2 minutes.
  2. Add turmeric powder, coriander powder, cumin powder and red chilli powder and mix. Add 1½ cups water and mix. Add carrot, potato and salt, mix, cover and cook.
  3. Put ginger in a grinder jar, add roasted brinjal and 2 tbsps water and grind. Add this to the pan and mix well. Add coconut milk and green peas and mix well. Cover and cook till potatoes are done.
  4. Transfer into a serving bowl, garnish with coriander sprig and serve hot.
