Ingredients list for Corn Tomato Bharta on Toast
- 1 cups Frozen Corn Kernels
- 2 medium Tomatoes
- 1 large Brinjal roasted and peeled
- 2 tablespoons Ghee
- 1 teaspoon Cumin seeds
- 5-6 cloves Garlic
- 1 inch piece Ginger
- 1 medium Onion
- 1-2 Green chillies finely chopped
- 1/2 teaspoon Red chilli powder
- 1 teaspoon Coriander powder
- 1 teaspoon Cumin powder
- a pinch Turmeric powder
- 1/2 teaspoon Dried mango powder
- 1/2 teaspoon Chaat masala
- Juice of 1 lemon wedge
- 15-20 Fresh mint leaves
- to taste Salt
- 1 French loaf (baguette)
- to sprinkle Onion seeds (kalonji)
- to garnish Breadcrumbs
Method
- Heat ghee in a non-stick kadai, add cumin seeds and sauté till fragrant. Finely chop garlic and ginger and add to the kadai and sauté for a minute.
- Finely chop onion, add to the kadai and sauté for 2-3 minutes. Finely chop tomatoes and add to the kadai, mix well and sauté for 3-4 minutes.
- Coarsely grind corn and add to the kadai. Add green chillies, red chilli powder, coriander powder, cumin powder, turmeric powder, dried mango powder, chaat masala and mix well.
- Chop brinjal finely and add to the kadai. Add lemon juice and mix.
- Finely chop mint leaves, add to the kadai and mix well. Add salt and mix and cook for 2-3 minutes.
- Cut the French loaf diagonally into 8 slices. Arrange the slices on a serving plate. Spread the bharta over them.
- Sprinkle onion seeds and garnish with bread crumbs. Serve immediately.
