Chicken Noodle Stew

This hearty chicken noodle stew combines tender chicken strips, crunchy vegetables, and aromatic herbs in a rich coconut milk broth, served over boiled noodles for a comforting, flavourful meal. This is a Sanjeev Kapoor exclusive recipe.

Ingredients

  • 100 grams boneless chicken,cut into strips
  • 100 grams noodles,boiled
  • 1 tablespoon oil
  • 3 cups chicken stock
  • 1/4 cabbage, shredded
  • 1 medium carrot, cut into juliennes
  • 1 medium onion, quartered and layers separated
  • 1 inch celery, chopped
  • 1 teaspoon crushed black peppercorns
  • 1 inch ginger piece, chopped
  • 1 tablespoon chopped garlic 
  • 2-3 green chillies, chopped
  • 4-5 basil leaves
  • Salt to taste
  • 1 cup coconut milk

Method

  1. Heat oil in a nonstick pan.
  2. Add ginger, garlic and green chillies. Sauté for a minute.
  3. Add onions & sauté. Add celery and mix.
  4. Add cabbage, carrots and stir well.
  5. Add chicken and sauté on high heat for two minutes.
  6. Add chicken stock and mix well. Allow the mixture to come to a boil.
  7. Ass salt and black pepper and mix. Add coconut milk and bring to a boil.
  8. Tear a few basil leaves into the pan.
  9. Place the noodles in a serving bowl and ladle the stew over it.
  10. Sprinkle crushed black peppercorns.
  11. Garnish with basil sprig and serve hot.
