Ingredient
- ¼ cup creamy peanut butter
- 300 grams boiled noodles
- ½ teaspoon dark soy sauce
- 1 teaspoon red chilli sauce
- Crushed black peppercorns to taste
- Salt to taste
- ½ teaspoon corn flour
- 2 tablespoons oil
- 2 spring onion bulbs, diagonally sliced
- 1 tablespoon finely chopped ginger
- 1 tablespoon finely chopped garlic
- 1 small red capsicum, cut into thin strips
- 1 small green capsicum, cut into thin strips
- 1 small carrot, cut into thin strips
- Diagonally sliced spring onion greens for garnish
- Diagonally sliced fresh red chillies for garnish
Method
- Take peanut butter in a bowl, add dark soy sauce, red chilli sauce, crushed black peppercorns, salt, corn flour and 2 tablespoons water and whisk till smooth.
- Heat oil in a non-stick wok, add spring onion bulbs, ginger and garlic, mix and sauté on high heat for 1-2 minutes.
- Add red capsicum, green capsicum and carrot, mix well and sauté for 1-2 minutes. Add boiled noodles and toss well.
- Add peanut butter mixture and 2 tablespoons water and mix well.
- Transfer the noodles into a serving bowl, garnish with spring onion greens and fresh red chillies. Serve hot.
