Ingredients
- 2 eggs, boiled
- 2 eggs
- 2 tablespoons oil
- 1 tablespoon finely chopped ginger
- 2 green chillies, finely chopped
- 1 medium onion, finely chopped
- 2 small tomatoes, finely chopped
- Salt to taste
- 1 teaspoon coriander powder
- 1 teaspoon red chilli powder + for sprinkling
- ¼ teaspoon turmeric powder
- ½ teaspoon garam masala powder + for sprinkling
- 2 tablespoons butter
- 1 tablespoon red chilli sauce + for drizzling
- 1 tablespoon chopped fresh coriander leaves
- 2 tablespoons green chutney
- ¼ cup grated processed cheese
- Pavs for serving
- Fresh mint leaves for garnishing
Method
- Heat 1 tablespoon oil in a non-stick pan, add ginger and green chillies and sauté till fragrant.
- Add onions, mix and sauté till translucent. Add tomatoes and mix. Add salt, mix and cook till the tomatoes turn soft and pulpy.
- Finely chop boiled eggs.
- Add coriander powder, red chilli powder, turmeric powder, garam masala powder and 1 tablespoon butter to the pan and mix well.
- Add chopped eggs and mix well. Add red chilli sauce and mix. Add coriander leaves and mix well. Transfer into a bowl.
- Heat remaining oil in the same pan. Break eggs in it and cook a sunny side up. Transfer the sunny side on top of the prepared bhurji.
- Mix green chutney, remaining butter and cheese well and put on top of the sunny side egg.
- Toast pavs till lightly browned on both sides.
- Sprinkle red chilli powder, garam masala powder and mint leaves on bhurji, drizzle red chilli sauce on top and serve hot with toasted pavs.
