Ingredients list for Alur Dum
- 500 grams Potatoes halved, parboiled
- 2 medium Tomatoes cut into small cubes
- 3-4 teaspoons Oil
- 3-4 Green cardamom
- 2 inch Cinnamon stick
- 2-3 Bay leaves
- 1-2 Dried red chillies
- 1/2 teaspoon Red chilli powder
- 1/2 tablespoon Sugar
- 1 1/2 tablespoons Turmeric powder
- 1 teaspoon Cumin powder
- to taste Salt
- 1 1/2 teaspoons Ginger paste
- 1/2 cup Yogurt
- 3-4 tablespoons Cashewnut paste
- 3-4 Green chillies
- to taste Crushed black peppercorns
Method
- Heat oil in a non-stick pan, add green cardamom, cinnamon, bay leaves, dried red chilli, chilli powder, sugar and mix well. Add potatoes and mix to toss.
- Add turmeric powder, cumin powder, salt, ginger paste, yogurt, and cashewnuts to the pan and mix well. Add tomato and green chilli and 1 cup water and mix well. Cook till the potatoes are completely cooked. Add black peppercorns and salt and mix well. Simmer for a minute.
- Serve hot.
