Ingredients for Slimmers’ Salad In No Oil Dressing Recipe

  • Iceberg Lettuce 1 bunch

  • Oranges 2

  • Onion peeled 2

  • Fresh mint leaves a few sprigs

  • Black peppercorns 10-12

  • Sea salt 1 teaspoon

  • Mustard seeds 1 teaspoon

  • Garlic 4 cloves

  • Lemon juice 3 tablespoons

  • Malt vinegar 2 teaspoons

  • Apples cubed 2 medium

  • Watermelon deseeded and cubed 1/4 small

  • Carrot cubed 1 medium

  • Cucumber deseeded and cubed 1 medium

  • Tomatoes deseeded and cubed 2 medium

  • Celery cubed 1 stalks

  • Green capsicum cubed 1 medium

  • Spring onions 2 inch piece

Method

Step 1

Wash lettuce, tear into bite-sized pieces and keep in ice-cold water to remain crisp.

Step 2

Peel oranges, separate segments and de-seed them. Cut them into half.

Step 3

Cut onion into quarters and separate the layers.

Step 4

Reserve some mint leaves for garnishing and chop the remaining.

Step 5

Crush peppercorns, sea salt, mustard seeds and garlic with lemon juice in a mortar with a pestle. Mix malt vinegar.

Step 6

In a bowl, mix all the fruits, vegetables and chopped mint leaves. Add the dressing and toss well.

Step 7

Serve the salad on a bed of crisp lettuce, garnished with reserved mint leaves.
