Ingredients
- 100 grams arugula leaves
- 1 red apple
- 1 green apple
- 1 English cucumber
- 1½ teaspoons mustard paste
- 1 lemon
- 1 ½ tablespoons honey
- 4 tablespoons extra virgin olive oil
- Crushed black peppercorns to taste
- Salt to taste
- Pro V Regal Jumbo Cranberries as required
- Pro V Lite Activated Pecan Nuts as required
Method
- Cut red and green apple into quarters. Deseed and slice.
- Halve and slice English cucumber.
- Take ice cold water in a bowl. Add arugula leaves and set aside for 10-15 minutes. Transfer in a salad rinser and drain excess water.
- Take mustard paste in a glass jar. Squeeze lemon, add honey, extra virgin olive oil, crushed black peppercorns and salt. Close the lid and shake well.
- Take cucumber in a bowl. Add green apple and red apple. Reserve some dressing and drizzle prepared dressing and mix well.
- Arrange some arugula leaves on a serving plate. Add some apple mixture on top. Sprinkle Pro V Lite Activated Pecan Nuts and Pro V Regal Jumbo Cranberries on top.
- Arrange remaining arugula leaves and apple mixture on top. Sprinkle some more Pro V Lite Activated Pecan Nuts and Pro V Regal Jumbo Cranberries on top.
- Drizzle remaining dressing and serve.
