Be a kid or a teenage or an adult or an oldie, chicken lovers trend all over the world at all times! One meat that is a favourite of all beyond belief! When cooked, it can be presented in many guises. Sauté it, fry it, toss it, bake it, steam it – eat it the way you want to. Whatever its form may be upon being cooked, its flavour may change but its flesh remains high in protein, low in fat and can be digested easily.

Ingredients for Green Chicken Tikka Recipe

  • Boneless chicken legs, cut into 1½ inch pieces 250 grams

  • Fresh fenugreek leaves (methi) ¼ cup

  • Fresh spinach leaves (palak) shredded ¼ cup

  • Fresh mint leaves ¼ cup

  • Salt to taste

  • Lemon juice 1 tablespoon

  • Red chilli powder 1 teaspoon

  • Butter 2 tablespoons

  • Garlic cloves 5-6

  • Ginger 1 inch

  • Green chillies roughly chopped 1-2

  • Coriander powder 1 teaspoon

  • Cumin powder ½ teaspoon

  • Garam masala powder 1 teaspoon

  • Yogurt 2-3 tablespoons

  • Oil for greasing and for basting

  • Cherry tomatoes halved 4-6

  • Cucumber triangles as required

  • Small onions roundels as required

  • Green chutney for garnishing

Method

Step 1

Take chicken in a bowl. Add salt, lemon juice, chilli powder and butter and mix well. Set aside for 10-15 minutes.

Step 2

Preheat an electric griller.

Step 3

Grind together garlic cloves, ginger and green chillies to a paste. Add fenugreek leaves, spinach leaves, coriander leaves, mint leaves and a little water and grind again to a smooth paste.

Step 4

Add the ground paste, coriander powder, cumin powder, garam masala powder and yogurt to marinated chicken and mix well.

Step 5

Grease the preheated griller with some oil, place the marinated chicken pieces and grill, basting with some oil a couple of times, till evenly cooked and golden on both sides, basting with some oil.

Step 6

Skewer 1 halved cherry tomato, 1 cucumber triangle, 1 onion roundel and 1 grilled chicken piece on each toothpick and place on a serving platter.

Step 7

Drizzle some green chutney on top and serve hot.
