Ingredients

  • 6-8 whole wheat slider buns
  • Batter
  • 1 cup gram flour (besan)
  • ¼ teaspoon turmeric powder
  • Salt to taste
  • ¼ teaspoon baking soda
  • ¼ teaspoon red chilli powder
  • Vada 
  • 3-4 medium potatoes, boiled, peeled, and mashed
  • 1 tablespoon oil + to deep-fry
  • 1 teaspoon mustard seeds
  • ¼ teaspoon asafoetida (hing)
  • 12-15 curry leaves
  • 1 small onion, finely chopped
  • 1 tablespoon garlic-green chilli paste
  • ¼ teaspoon turmeric powder
  • A pinch of red chilli powder
  • Salt to taste
  • 8-10 green chillies
  • To apply
  • Green chutney as required
  • Red chilli-garlic chutney

Method

  1. Take gram flour in a large bowl, add turmeric powder, salt, baking soda, red chilli powder and ⅓ cup water and whisk till you get a smooth batter of coating consistency.
  2. Heat oil in a non-stick pan, add mustard seeds and let them splutter. Add asafoetida, curry leaves and onion, mix and sauté till onion is translucent. 
  3. Add garlic-green chilli paste, mix well and saute for 1 minute. 
  4. Add turmeric powder, red chilli powder and salt and mix well. Transfer into a bowl and allow to cool slightly. Add potatoes and mix well. 
  5. Heat sufficient oil in a kadai. 
  6. Divide the potato mixture into small equal portions, shape each portion into a ball and flatten slightly. These are vadas. 
  7. Dip each vada into the batter, gently slide them into the hot oil and deep-fry till golden brown. Drain on absorbent paper. 
  8. Make small slits on the green chillies, gently slide them into hot oil and deep-fry for a few seconds. Drain on the same absorbent paper. 
  9. To make the sliders, slit each pav, apply some green chutney on the base half of each pav, sprinkle some red chilli-garlic chutney, place a vada over the chutnies and cover with the top half of each pav. To secure the sliders place a fried green chilli on each slider and pierce a toothpick through it.
  10. Arrange the sliders on a serving plate and serve hot with sweet tamarind chutney.
