Ingredients
- 8 pavs
- Spicy ganthiya as required
- ½ cup tamarind
- ¼ cup chopped jaggery
- 1 teaspoon Kashmiri red chilli powder
- 1 teaspoon cumin powder
- 1 teaspoon coriander powder
- 8-10 garlic cloves
- Black salt to taste
- 2 green chillies, chopped
- 2-3 tablespoons chopped fresh coriander leaves
- 1 small onion, chopped
Method
- Take tamarind in a bowl, add jaggery and 1½ cups warm water and mix well. Set aside till jaggery dissolves.
- Take Kashmiri red chilli powder in a mortar, add cumin powder, coriander powder and garlic cloves and crush coarsely with the pestle. Add ¼ cup water and mix well.
- Strain the tamarind water into another bowl and squeeze the tamarind pulp. Add crushed chilli-garlic mixture, black salt, green chillies, coriander leaves and onion and mix well.
- Break pav into pieces and arrange in serving bowls. Sprinkle spicy ganthiya over them. Pour the tamarind mixture over and serve.
