Ingredients

  • 8 pavs
  • Spicy ganthiya as required
  • ½ cup tamarind
  • ¼ cup chopped jaggery
  • 1 teaspoon Kashmiri red chilli powder
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • 8-10 garlic cloves
  • Black salt to taste
  • 2 green chillies, chopped
  • 2-3 tablespoons chopped fresh coriander leaves
  • 1 small onion, chopped

Method

  1. Take tamarind in a bowl, add jaggery and 1½ cups warm water and mix well. Set aside till jaggery dissolves.
  2. Take Kashmiri red chilli powder in a mortar, add cumin powder, coriander powder and garlic cloves and crush coarsely with the pestle. Add ¼ cup water and mix well.
  3. Strain the tamarind water into another bowl and squeeze the tamarind pulp. Add crushed chilli-garlic mixture, black salt, green chillies, coriander leaves and onion and mix well.
  4. Break pav into pieces and arrange in serving bowls. Sprinkle spicy ganthiya over them. Pour the tamarind mixture over and serve.
