Ingredients
- 8 hard-boiled eggs, peeled
- 4 eggs
- Butter to cook
- 4 medium onions
- 24-32 green garlic stalks
- 4 teaspoons green chilli paste
- 1 teaspoon turmeric powder
- 4 teaspoon coriander powder
- 2 teaspoons garam masala powder
- Salt to taste
- 8 pavs
- 4 teaspoons oil
- Red chilli powder to sprinkle
Method
- Chop onions and green garlic stalks.
- For each portion, heat 2-3 tablespoons butter on a tawa, add ¼ the chopped onions, ¼ the chopped green garlic stalks, mix and sauté for 2-3 minutes.
- Add 1 teaspoon green chilli paste, ¼ turmeric powder, 1 teaspoon coriander powder, ½ teaspoon garam masala powder and mix well.
- Grate 2 boiled eggs directly into the pan. Add salt. Sprinkle 2-3 tablespoons water and mash well with a masher. Transfer onto a serving plate.
- Heat some butter on the same tawa, and toast 2 pavs till crisp. Place them on another serving plate.
- Heat oil on the same tawa. Break 1 egg on the tawa, sprinkle red chilli powder and cook for 1 minute.
- Place on the boiled egg mixture and serve hot with pavs.
