Anda Ghotala

A spicy Mumbai-style egg bhurji made by mashing boiled eggs with sautéed onions, green garlic, butter and spices, topped with a fried egg and served hot with butter-toasted pav. This is Sanjeev Kapoor exclusive recipe.

Ingredients

  • 8 hard-boiled eggs, peeled
  • 4 eggs
  • Butter to cook
  • 4 medium onions
  • 24-32 green garlic stalks
  • 4 teaspoons green chilli paste
  • 1 teaspoon turmeric powder
  • 4 teaspoon coriander powder
  • 2 teaspoons garam masala powder
  • Salt to taste
  • 8 pavs
  • 4 teaspoons oil
  • Red chilli powder to sprinkle

Method

  1. Chop onions and green garlic stalks.
  2. For each portion, heat 2-3 tablespoons butter on a tawa, add ¼ the chopped onions, ¼ the chopped green garlic stalks, mix and sauté for 2-3 minutes.
  3. Add 1 teaspoon green chilli paste, ¼ turmeric powder, 1 teaspoon coriander powder, ½ teaspoon garam masala powder and mix well.
  4. Grate 2 boiled eggs directly into the pan. Add salt. Sprinkle 2-3 tablespoons water and mash well with a masher. Transfer onto a serving plate.
  5. Heat some butter on the same tawa, and toast 2 pavs till crisp. Place them on another serving plate.
  6. Heat oil on the same tawa. Break 1 egg on the tawa, sprinkle red chilli powder and cook for 1 minute.
  7. Place on the boiled egg mixture and serve hot with pavs.
