Ingredients
- 400 grams cottage cheese (paneer), cut into 2-inch-long pieces
- 3 tablespoons oil
- 1 teaspoon cumin seeds
- 2 dried red chillies, broken
- 2 one-inch pieces of ginger, cut into thin strips
- 1-2 green chillies, chopped
- 2 medium onions, thickly sliced and layers separated
- 1 teaspoon turmeric powder
- 1½ teaspoons red chilli powder
- 2 medium green capsicums, seeded and cut into thick strips
- Salt to taste
- 1½ tablespoons vinegar
- 2 medium tomatoes, seeded and cut into thick strips
- 1 teaspoon garam masala powder
- 2 tablespoons chopped fresh coriander leaves
Method
- Heat oil in a non-stick kadai and add cumin seeds. When they change colour add red chillies, ginger strips, green chillies and onion slices, mix and sauté for 30 seconds.
- Add turmeric powder and red chilli powder and mix well. Add capsicum strips, mix and saute for 2-3 minutes. Add cottage cheese pieces and toss. Add salt and vinegar, mix lightly and cook for 2-3 minutes. Add tomato strips and garam masala powder and mix well gently.
- Transfer into a serving platter and serve hot garnished with coriander leaves.
