Ingredients                

  • 400 grams cottage cheese (paneer), cut into 2-inch-long pieces    
  • 3 tablespoons oil                        
  • 1 teaspoon cumin seeds                    
  • 2 dried red chillies, broken            
  • 2 one-inch pieces of ginger, cut into thin strips            
  • 1-2 green chillies, chopped     
  • 2 medium onions, thickly sliced and layers separated                 
  • 1 teaspoon turmeric powder                 
  • 1½ teaspoons red chilli powder
  • 2 medium green capsicums, seeded and cut into thick strips         
  • Salt to taste
  • 1½ tablespoons vinegar    
  • 2 medium tomatoes, seeded and cut into thick strips  
  • 1 teaspoon garam masala powder            
  • 2 tablespoons chopped fresh coriander leaves     

Method 

  1. Heat oil in a non-stick kadai and add cumin seeds. When they change colour add red chillies, ginger strips, green chillies and onion slices, mix and sauté for 30 seconds.
  2. Add turmeric powder and red chilli powder and mix well. Add capsicum strips, mix and saute for 2-3 minutes. Add cottage cheese pieces and toss. Add salt and vinegar, mix lightly and cook for 2-3 minutes.  Add tomato strips and garam masala powder and mix well gently. 
  3. Transfer into a serving platter and serve hot garnished with coriander leaves.
