Ingredients
- 8 medium tomatoes
- 8-10 seedless dates, soaked and chopped
- 1 inch ginger
- 4-5 garlic
- 3-4 green chillies
- 2 medium onions, roughly chopped
- 2 tablespoons ghee
- ¼ teaspoon mustard seeds
- ¾ teaspoon cumin seeds
- ¼ teaspoon asafoetida (hing)
- Salt to taste
- 1½ teaspoons red chilli powder
- ½ teaspoon turmeric powder
- ¾ teaspoon coriander powder
- 2 teaspoons dried mango powder (amchur)
- 2 tablespoons chopped fresh coriander leaves + for garnish
Method
- Roast the tomatoes over direct flame till well charred from all sides. Dip them into a bowl of cold water and peel them. Trim the top of the tomatoes and halve them.
- Transfer the tomatoes into a chopper and finely chop them. Transfer them into a bowl.
- Put ginger, garlic, green chillies and onions into the chopper and finely chop them as well.
- Heat ghee in a kadai. Add mustard seeds and let them splutter. Add cumin seeds and asafeotida and saute for a few seconds.
- Add chopped ginger, green chillies and onions and sauté till translucent. Add salt, red chilli powder, turmeric powder and coriander powder and mix well. Sauté for 1 minute.
- Add chopped tomatoes and mix well. Add dried mango powder, mix and cook for 2-3 minutes.
- Add the dates, mix and cook for 5-6 minutes or till the mixture thickens.
- Transfer into a serving bowl, garnish with coriander leaves and serve hot.
