Ingredients
- 5 big burger buns
- Caramelized onions
- 1 tablespoon oil
- 2 large onions, sliced thinly
- Salt to taste
- 1½ tablespoons sugar
- 1 teaspoon soy sauce
- Sauce
- ½ cup mayonnaise
- 1 teaspoon mustard paste
- 1 tablespoon tomato ketchup
- 1 teaspoon red chilli sauce
- 1 teaspoon red chilli flakes
- 1 teaspoon dried mixed herbs
- Patty
- 300 grams chicken mince (keema)
- 3-4 tablespoons oil
- 1 tablespoon butter
- 1 tablespoon finely chopped garlic
- 1 green chilli, finely chopped
- 1 large onion, finely chopped
- Salt to taste
- 1 teaspoon sugar
- 1 teaspoon red chilli flakes
- 1 teaspoon dried mixed herbs
- 1 teaspoon red chilli powder
- 2 tablespoons dried breadcrumbs
- 1 tablespoon chopped fresh coriander leaves
- 1 egg
- 1 cup grated processed cheese
- 5 cheese slices
- Few lettuces leaves
- Tomato roundels as required
Method
- To make caramelized onions, heat oil in a shallow pan, add onions, mix and saute, stirring at intervals, till golden brown.
- Add salt and sugar and mix well. Cook till the sugar melts and the mixture browns.
- Meanwhile to make the sauce, take mayonnaise in a bowl. Add mustard paste, tomato ketchup, red chilli sauce, red chili flakes and dried mixed herbs and mix till well combined.
- Add soy sauce to the caramelizing onions, mix well and cook for 30 seconds. Switch the heat off, transfer the mixture onto a plate, spread evenly so that no lumps are formed and allow to cool completely.
- To make the burger patty, heat 1 tablespoon oil and butter in another shallow pan. Add garlic, green chilli, mix and sauté for 1 minute. Add onion, mix and sauté till lightly coloured.
- Add salt and sugar and mix well. Switch the heat off and allow the mixture to cool slightly.
- Take chicken mince in a large bowl, add red chilli flakes, dried mixed herbs, red chilli powder, the sauteed onion mixture and dried breadcrumbs and mix well.
- Add coriander leaves, break the egg directly into it and mix well. Grease your palm with some oil and take a portion of the mixture. Make cavity in the center and stuff it with a portion of processed cheese. Cover completely with some more chicken mixture and seal the edges well, ensuring that the cheese is completely ensconced. Gently press to shape it like a patty. Make more 3 more patties with the remaining chicken mixture and cheese.
- Halve the burger buns.
- Heat 1-2 tablespoons oil in yet another shallow pan, place 2 patties in the pan and cook for 2-3 minutes. Flip and cook the other side for 2-3 minutes as well.
- Place a cheese slice over each patty. Cover the pan with a lid and cook till the cheese melts. Remove the lid and gently transfer the patty onto a plate.
- In the same pan, toast the burger buns for a few seconds.
- Cook the remaining patties similarly with the remaining oil.
- To make each burger, apply some sauce on the base half of a burger bun. Arrange a few lettuce leaves, place a patty over it, arrange 2 tomato roundels, top with some caramelized onions. Apply some sauce on the top half of the burger bun and place it on top. Secure the burger with a long toothpick or a satay stick and serve immediately.
