Ingredients
- 1 cup soya nuggets, soaked and drained
- 1 cup green peas
- 4 tablespoon oil
- 1 teaspoon cumin seeds
- 1 tablespoon finely chopped ginger
- 2 green chillies, finely chopped
- 2 medium onions, finely chopped
- 1 tablespoon finely chopped garlic
- 1 small green capsicum, finely chopped
- 6 medium tomatoes, finely chopped
- 1½ teaspoon red chilli powder
- 1½ tablespoon coriander powder
- ½ teaspoon turmeric powder
- 1 teaspoon roasted cumin powder
- Salt to taste
- 6-8 fresh coriander sprigs
- Tomato flowers for garnishing
- Fresh red chilli flower for garnishing
- Thin strips of ginger for garnishing
Method
- Heat oil in a non-stick pan, add cumin seeds and when they begin to change colour, add ginger, green chillies and onions andsauté till translucent. Add garlic and sauté further for 2 minutes. Add capsicum and tomatoes and mix well. Cook for 8-10 minutes.
- Add red chilli powder, coriander powder, turmeric powder, cumin powder and salt.Mix and cook for 3-4 minutes. Add soya nuggetsand green peas and mix well. Cook till soya nuggetsand green peas are done.
- Finely chop coriander and add to the pan and mix well.
- Transfer the bhurjiinto a serving bowl, garnish with tomato flower, red chilli flower and ginger strips and serve immediately.
