Rice Crispies Chivda

A healthy mixture of brown rice crispies, puffed rice, cornflakes, dried fruits and tempered with a flavourful tempering. This is a Sanjeev Kapoor exclusive recipe.

Ingredients list for Rice Crispies Chivda

  • 1 cup Puffed rice (kurmura/murmura)
  • ½ cup Corn flakes
  • 1 cup brown rice crispies
  • 1 tablespoon Oil
  • ½ teaspoon Mustard seeds
  • ½ teaspoon Fennel seeds (saunf)
  • 2 Small Green Chillies chopped
  • 2 tablespoons Fresh coriander leaves chopped
  • 6-7 Curry leaves
  • 4-5 Garlic cloves sliced
  • ½ teaspoon Turmeric powder
  • 2 tablespoons Roasted peanuts
  • 8-10 Almonds slivered
  • 12-15 Pistachios slivered
  • 6-8 Cashewnuts halved
  • tablespoon Raisins
  • 1 tablespoon Melon seeds (magaz)
  • 2 teaspoons White sesame seeds
  • 2 teaspoons Flax seeds
  • ½ cup Dried coconut ( khopra) grated and roasted
  • to taste Salt
  • 1 teaspoon Sugar

Method

  1. Heat oil in a non-stick pan. Add mustard seeds and fennel seeds and let the seeds splutter.
  2. Add green chillies, coriander leaves and curry leaves and sauté till the curry leaves turn crisp.
  3. Add garlic and sauté for 1 minute. Add turmeric powder, mix well and sauté for 30 seconds.
  4. Reduce heat, add peanuts, almonds, pistachios, cashewnuts, raisins, melon seeds, sesame seeds and flax seeds, mix and sauté for 1-2 minutes.
  5. Add coconut and sauté till it turns golden brown. Add brown rice crispies, puffed rice and cornflakes, mix well and sauté for 4-5 minutes.
  6. Add salt and sugar and mix well. Remove from heat and cool.
  7. Serve or store in an airtight container.
