Ingredients
- 1 cup black eyed beans (lobiya), soaked
- 200 gms red pumpkin, cubed
- 3 tbsps oil
- 1 tsp cumin seeds
- 2 dried red chillies, broken
- ¼ tsp asafoetida
- 1 tbsp chopped ginger
- 1 tbsp chopped garlic
- 2 medium potatoes, cubed
- ¼ tsp turmeric powder
- 1 tsp coriander powder
- ½ cup tomato puree
- Salt to taste
- ¼ cup fresh coriander leaves
- 1 medium onion, sliced
- 2 green chillies, broken
- ½ tsp garam masala powder
Method
- Heat oil in a pressure cooker. Slice onion.
- Add cumin seeds, dried chillies, onion, asafoetida, ginger and garlic to the cooker and saute till fragrant.
- Add pumpkin, potatoes, black eyed beans, turmeric powder and coriander powder and mix.
- Add 3 cups water and tomato puree and mix. Add salt and mix.
- Chop coriander leaves and add to the cooker. Add green chillies and garam masala powder and mix. Cover the cooker with lid and cook under pressure till 3 whistles are given out.
- Let it stand for 10-15 minutes.
- Serve hot with hot phulkas or rotis.
