And not just biryanis, curries, bakes and all other preparations with this wonderful meat are always special. Did you know, unlike other dishes, a day-old mutton prep will always be all the more tastier on the palate! Try it the next time you plan on to take on this meat.

Ingredients for Khichra Recipe

  • Mutton 1/2 inch cubes 400 grams

  • Split red lentils

  • Split red lentil (masoor dal) soaked 2 tablespoons

  • Split pigeon pea (toor dal/arhar dal) soaked 2 tablespoons

  • Split Bengal gram (chana dal) soaked 2 tablespoons

  • Split green gram skinless (dhuli moong dal) soaked 2 tablespoons

  • Broken wheat (dalia/lapsi) soaked 1/2 cup

  • Basmati rice soaked 1/4 cup

  • Pure ghee 3 tablespoons

  • Cinnamon 2 inch stick

  • Green cardamoms 5-6

  • Cloves 5-6

  • Onion sliced 1 medium

  • Green chillies slit 4

  • Ginger paste 2 teaspoons

  • Garlic paste 2 teaspoons

  • Turmeric powder 1/2 teaspoon

  • Red chilli powder 2 teaspoons

  • Garam masala powder 1 teaspoon

  • Deep fried onions 1/2 cup

  • Fresh mint leaves chopped 2 tablespoons

  • Salt to taste

  • Lemon juice 2 tablespoons


Step 1

Heat ghee in a pressure cooker. Add cinnamon, green cardamoms and cloves and sauté till fragrant. Add onion and sauté for two to three minutes. Add mutton and continue to sauté.

Step 2

Add green chillies and ginger paste and garlic paste and sauté for two minutes. Add all the dals and broken wheat and mix. Add five cups of water and mix and let it come to a boil.

Step 3

Add turmeric powder, red chilli powder, garam masala powder and half the fried onions. Mix and add rice, mint leaves and salt. Mix well.

Step 4

Cover the cooker with the lid and cook under pressure for four to five whistles. Open the lid when the pressure has reduced. Using a hand blender mash the mixture.

Step 5

Add lemon juice and serve hot garnished with the remaining fried onion and mint sprigs.
